In a former life I think I was a chef. I try each week to find a new recipe to attempt. This weekend I made two things. Today I made cheesy shell lasagna and chicken rice soup.The lasagna is not really lasagna at all, but more like a casserole. Or, as we say in Minnesota, a hotdish. It is made with sour cream. What genius thought of putting sour cream in lasagna? It turned out pretty well, but its a little high points for the amount of food you get. I will have to tweak it and see if I can make it lower.
The last time I attemped chicken soup it didnt turn out so well. I don't know what happened, or how a pretty experienced cook managed to screw it up, but somehow I did. This time was much better. It always amazes me how much water goes into the soup. I put water in, it evaporates and is absorbed, I put more water in, it evaporates, and it goes on and on. I probably used 32 cups of water in what ended up to be an 8 cup soup. But, that's ok. I dont know if I made it "right" but it tastes really good.
Can you freeze chicken rice soup? I don't see myself eating 8 cups of it this week, esp since I'm only eating at home Monday, Wednesday, and Thursday.
I am, by nature, a multitasker. Right now I have the soup going on the stove for my dinner, I am in the midst of cleaning out my closet, I am writing this diary entry, watching the Vikings game, and chatting online. As soon as I'm done cleaning I start grading papers. I would get done with all of these things in less time if I did one at a time, I'm sure.
I watch TV in a mirror from my computer, so when I get up from my 'puter, stuff looks really really funny on the TV, like its backwards. I have to remind myself that that is how it is really supposed to be.
